    Have you thought about starting a fire in the oven the night before...kind of a pre-heat. When I am prepping for a bread bake, I put in a stack of wood and light it off about 10 pm. After it's going reasonably well, I damper it down to a consistent burn (not roaring and not smokey!) with my fire door...
