    Thats due to all the heat leaking out via the base as you didnt put insulation under the floor, the insulated door wont help.

    Mine stays at 300 for around 1 week, thats the difference underfloor insulation makes.

    Sorry, I should have said, it takes a week to cool from 300c to around 100c.

      Thanks Al,

      There's about 100mm of vermiculite mix under the floor.

      You can see it in the early photos

      My plunging temperatures in the early days were probably due to me not firing it up for long enough. 3 hours+ works best for roasting but I can get away with less if I leave the fire in, say for example, pizza

        But the insulation stops short of the front and side hearth bricks, the heat will find anyway out it can.
        Its like a slowly leaking balloon, it will keep leaking until there is equilibrium.

          Peter,when your oven is new it contains lots of water, particularly if you used vermicrete rather than blanket. I'm sure if you keep firing it you will find that the performance improves.
