    I'm no expert on gas assisted pizza ovens. But, I'm guessing that the ash is residual food from previous cooks burning clean.

    i wonder if its because burning natural gas creates humidity and i wonder if the ash is just floating because of the burner causing a blowing effect with the flame coming out and the ash is just sticking to the ceiling because of the hunidity. you may have to really give it a good cleaning before using natural gas but I may be wrong..im just thinking out loud.

    Hello,

    I spent quite a bit of time to build a brick pizza oven and chimney on top. it added a natural gas to it.

    However, when cooking using natural gas, ton ashes can be seen hanging on top of the ceiling of the oven.

    Any ideas on why?
