    Any ideas for a newbie on fire in the oven baking? Need to keep a 500 degree oven for cooking bagels like they do in Montreal? I had tried to let the oven cool a bit after pizza but the oven was still way to hot. I went for it and ended up burning the be-geebers out of the bagels.

    Two options:
    1) Fire to 500 degrees and bake your bagels then fire again to pizza temps for pizza.
    2) Wait longer until the oven cools to 500. Sear something in the meantime. Roast something in a dutch oven - just don't put in the bagels until the temp is low enough.
