Am in Paris at the moment and happened to stumble upon the this 60 pizza, internal floor rotating monster, running on what seemed to be compressed wood fuel logs. Tried the pizza - not too bad but like many I have come across, the temp was too low. Enjoy the pic (ipad can only upload one at a time :-()

    Interesting oven. Thanks for sharing.
Why is this thus? What is the reason for this thusness?
    I forgot who said that.

Interesting to see the two fire doors on either side and the pizza handling door in the middle. A bit different from the door width being a bit under 1/2 the width of the oven. The the air in, smoke out , food in and out all operating from the one opening.
I suppose it suits a commercial purpose. I must sit down one day and figure out what my pizza is costing me per unit, the labour cost aside surely I must be below the local pizza shop by now
