You could build a section of fence to screen the oven area if the winds become a problem.

But in many cases you want your oven facing in a certain direction for aesthetics and for practical reasons. So if you have a constant wind problem you may need to balance those elements and reach a compromise.

Quick answer would be yes. as per the plans under tips and hints

"When selecting the direction your oven will face, consider
making sure that your opening does not face possible
winds, which might disrupt your cooking and fire
management."

does it matter if the oven opening faces prevaling wind or not.
