Re: New build in SW Arizona

    KB,
It does look tall doesn't it. I thought the same thing after I stood it up there. I used the dome spreadsheet calculator, and that's what it came up with for a 40" oven 13.6 inches I have it at 13 5/8, which is 13.625,and it's the same width. So it hits the 63% rule perfectly, just weird how it looks off tho, Thanks for the input, really appreciate it, I tried to talk the boss into a full radius arch, but was vetoed ....so off to the races I guess.
    Jeff
Again, thanks for the input and feedback

I was thinking maybe you might want to go wider. That's fairly narrow.

I'm Pretty sure of my calculations are correct????, I also did a 40" and 63% of a 20" radius is 12.6"...... I think I ended up about 21" with IT at 1" above floor. I still wish it was lower. Bottom of my pizza's cook faster than top......Just my opinion, wondering what everyone else thinks?

I have a 32 inch. Width of the opening is 16 inches and highest point on the opening is 10 inches.

I am very happy with the balance between top and bottom cooking.

              KB,
That's exactly why I feel this forum is so useful, doing the math it does come out to 12.6. I'm going to double check the dome calc sheet when I get home, maybe I read it wrong, nice thing is I'm still early enough in my build where a change like this can be made w/o any issues. Also I'm going to go with a full arch vs the radius arch design I have currently, and 16 inches wide. I plan on a clay flue liner for my chimney and mexican brick around that ,so the full arch will have more structutral integrity than the radius......wife won't be happy....but I will.
              Jeff

I cut it twice and it was still too short......

Re: New build in SW Arizona

KB, I found the issue, using Pompeii dome calculator v4 gives me the following....
                Oven size 40.00
Distance from IT Pivot to Dome Floor 1.50
                Height of vertical course(s) 2.50
                Brick Height 2.50
                Brick Width 4.50
                Brick Depth 4.50
                Mortar Joint size 0.125

                Length of IT (inches) 20.0
                Dome height (inches) 21.5
                Door height (inches) 13.9
                Effective Radius (inches) 20.0

The Calculator includes the IT pivot to floor measurement in the calculations, which being directly over the pivot equals 21.5 inches ergo 13.6 for door height. All this measuring and remeasuring, has it's advantages........ my floor template was a 48 " diameter cutout....should have been 49...... looks like I am building a 39 inch oven LOL more lemonade!!!!

Thanks again for the input, much appreciated!!!

39 inches is a Meter. Looks like you're going metric! My oven is 39 as well.

Glad to see the spreadsheet working for you.

Re: New build in SW Arizona

In case any one was wondering....... This is the patio kitchen area to the right of my build. The inside shot is where we plan on pouring a concrete counter top and polishing it. It will have a gas grill on the end, and a ceramic hand painted sink we picked up in MX for next to nothing, next to the grill. We will also be pouring a bar top type concrete counter top on the top of the wall. I will I could take credit for the Mexican brick work, but I found a local man who is an artist when it comes to laying this type of brick. This is also the type of wall that will enclose my WFO and smoke house. This type of brick is made from caliche clay, sand, and horse or burro manure, pressed into wooden forms, dried in the sun and then baked in a huge wood fired kiln.

As I recall, mine's 42", with a height a little over 13" and width somewhere around 21". Make sure that you build the chimney large enough so that smoke doesn't always come out and stain the front. I have 13x13 flues and an opening something like 10x12

Jeff, with regards to the oven opening width, I'd respectfully suggest that you think ahead about future baking options...such as using a full sheet pan. I tend to use my oven less for pizza and more for baking other things, so consequently I find it really convenient to be able to use a full sheet pan (which measures 18" x 26") into my oven. Widening out to 19" for the opening won't affect "your ratio" but it will expand your future options...like baking a full load of biscotti or having an adequate drip pan for roast suckling pig. Not saying that you'll always use or need that extra width, but it's sure nice to have it as an option.
