I should have stated that the pic is an example of a dual axle....I wish it was mine, I plan to build one sometime but would like it to be enclosed.

We can still be inspired by your pictures to make the best portable pizza oven we can. That one is sharp!
I have a question about the 3" ceramic blanket. Will that be considered all insulation or is there some heat mass value to it?

It's insulation. Although heavy, It has no thermal mass value.
