Was about to set my firebricks for the oven floor, and was wondering why they needed to be set in a clay/sand mix. Was thinking since I'm buying the refactory mortar for the walls why not the floor?

Were you going to set the bricks wet or dry?
Either way, you want the floor bricks to "float" due to expansion and contraction - plus it makes it really easy to change the bricks should one break.
The mix below the bricks is there to help level the floor, plain and simple. I know I just used sand as I did not want to take a chance of the fireclay getting wet during a storm (like we have just had) and then something going wrong.
If your insulation layer is level and flat across all pieces, no need for the material underneath. If you used vermiculite or pearlite, a layer would not hurt.
