    I use Wattle for pizza nights as it burns fast and hot but if I'm doing roasts I use hardwood like Ironbark or other good hardwood as it burns slow and steady, perfect for slow cooking.

      Welcome onboard....like you oven. Would love to see you post some details of it construction, type, etc...were all interested in whats produced locally.
      My favourite wood for finishing off for pizza etc is She Oak. Burns real hot and give a great coal... smells pleasent too. Off course I burn anything to a point...to date the ovens consumed 2 house renovation's wall studs part of a demolished church. Got any 'golden cane" in the garden ? you can burn those to heat up the oven and use some good hardwood to finish. The frond are full of oil and go up like a bomb watch the hair on the back of you hands
