I happened to fall upon a Readers Digest book last week which I recon is as good (and for me even better than the Hamelman book), titled:

Worth contacting your library and checking it out.
I just did a Bookfinder.com search and she is a prolific writer on food books, in fact I just ordered another of her books
"Bread: 150 Traditional Recipes from Around the World"
I will report on it's arrival.
