I am planning on building an pizza oven with refractory concrete. Here in Germany I found a source where I can get it. The manufacturer notes that the thermal conductivity of the concrete is 0.6 W/mK. I did a quick research and found out that fire bricks which are usually build in ovens have around 1 W/mK.
I want to build the dome and the floor of the oven from this material. How do you think it will affect the performance of the oven?
