Hi
Am wondering if its possible to incorporate a gas jet into my design, thinking about pre-heating with gas and then firing up with wood to bring the temp up in the last stages and through the cooking process. I'm assuming it would also be invaluable during the curing phase.
Has anyone done anything similar - can offer advice?
