    We just purchased a wood fired pizza oven trailer that had been in a wreck.
    I have run a couple of good hot fires in it and checked for hot spots w/ infra red thermo. None spotted. The question i have is the cooking surface stones . should there be any gap between them or should they be touching?
    Right now to get my cooking area up to temp i have to build my fire on the cooking surface and after i get a coal bed move the coals back and sweep the cooking surface. not getting heat transfer from back to front. there are 1/8 " to 1/4 " gap between the slabs on the cooking surface. Should i reseat all the slabs so that they are touching???
