    What a great video! As an American of Italian decent, with limited success in trying to make rustic Italian bread, I'm very inspired by this film! I'm AM going to make excellent pizza and bread dough if it takes me the rest of my life! It looks so simple but these people are masters at this! True Artists!

    That was fun :-) Yes that is pretty high hydration. Looks a lot like ciabatta. The forming technique was interesting - drawing the edges in to the middle repeatedly. And that's one full oven!! Now I'm hungry after watching the family meal at the end ...

    Wow that is a great link. A couple of things stand out for me.
    1) They mix the dough in a big gavanized tub...no fancy mixers here
    2) The dough has a very high hydration. Anyone want to take a guess...maybe 75%?
    3) The oven and door is not fancy, it shows you can finish your oven at any level and it will still bake!
    4) The handling of the wet dough is very impressive, and very minimal.
    5) The loading of the oven is very interesting, I always rush rush rush getting the bread in...they just take their time and don't really dock the dough, just kind of push it down in the middle. But when the bread comes out, you cannot even tell they pushed it down...I wonder what the purpose of that is?
    6) She says young people do not bake...I think we are coming around on that one (is 42 young? I think so!)

    I am glad to see them mix all the pizza ingredients up in a bowl, then apply them. I have been laughed at for doing it. Admittedly, it does look like a puke-pizza before it is cooked.

    Never realized how close Italian is to Spanish, I picked up alot of what they were saying.
