    Yes, the oven will be under a patio cover. We should start that in the next week or ten days.

    With your door partially open there is cool airflow around your thermometer. I get a similar effect with an oven thermometer placed in the middle of the oven if the door has been out for for a while. The temp climbs up as the oven heats the cold air. I usually wait 10 mins after closing the door before opening it again to check the reading.If you read your temp with an IR i'm sure you would get a different story. Notice your gauge reads in F rather than C

    Here is a vid of my flue damper in action in my barrel oven with a fire in it.
    The temp rise is significant as the damper is closed, when the damper is opened the temp drop is also great.

    The insulated door is partially open to allow for some air flow, as is the damper.
