Hey David s - I have exactly the same thing and found it on line somewhere. Might have been Catch of the Day. It works a treat. I have been waiting for them to show up again because 2 would be about right.

I've got three of these. They have a lid to keep out the flies and space underneath for ice. They are also pretty cheap, around $15 if I remember correctly. Around 400 mm long with four removable compartments.1 Photo

Thanks for the photo. I'm sure that I can find someone here in mex. That can make me a holder. I may have to make it out of wood 1 X 4's to start with.
Your photos will help because I cannot speak Spanish and if I have a hard time communicating, I will just show him the photos on my iPad.
I was going to have a solid bottom for ice and water, but as you say, my toppings are out for only 1-2 hours and are cold to start with.Last edited by Mexman; 05-05-2014, 06:47 PM.

I sympathise with your situation.
However, get a sheet metal worker to simply fold up some 16g 304 stainless (food grade) to the dimensions that will fit your trays, ie. inside dimension and depth. The length will depend on how many trays you want to hold in each rack. Mine gave an open bottom as I don't need them to hold ice keeping the ingredients cool as they disappear within an hour.
The lengths of folded stainless can then be notched and folded/welded at 90˚ corners. This is a very simple task that should not take longer than an hour or so.

I can have Amazon and eBay ship to a mail service in Laredo, Tx, who then forwards it on to me in Mexico.
The problem is, the item has to go thru Mex customs and then on to a Mex shipper.
I just ordered a computer scanner from Amazon for $149 almost two weeks ago it has not arrived yet (two days shipping to Texas) and will probably cost $250 total when I receive it.
I'm having 25 people coming over this weekend for a pizza Party.
This will be my third pizza Party since my WFO was finished two Months ago.
Us Gringo's in Mexico, only order from the states when we have a friend coming down or we cannot get it anyplace else.
I'm on my way to a metal shop to see in I can find some place to make me the condiment holders like you have. I can buy the SS binds here in Mex, but I have to set them out loose.Last edited by Mexman; 05-05-2014, 10:02 AM.

Loved the tray layout that Neil built. I just spent all day shopping at Restaurant supplies looking for some trays to set on my table to hold condiments.
I live in Mexico. I don't know where I can have the tray holder made in stainless steel. I may build it out of wood. I found many places that had the SS trays.
The nice thing about making it out of SS is I could fill the bottom with ice and put a clear piece of plexiglass over it while I'm waiting for the guest to arrive.

Just finished the washing up and cleaning up for the night.
The pics are the tray layout but this time I only had 9 smaller trays, one narrow and 2 larger trays for the cheeses.
With only the immediate family, I (rather my other half) limited the selection to prawns, calamari, onion, mushrooms, pineapple, capsicum, avocado slices, diced ham, cabana, meatworst, and mozzarella and Tasty cheeses. Plenty of sauce selections including my home grow/home made sauce, crushed garlic, chilli relish, anchovies and pizza topping. 24 pizzas made, oven very hot in 90 minutes of firing, first pizzas cooked in less than a minute so you must be on the ball or you eat carbon. After 10 to 15 minutes they are better at around 2-3 minutes.

When I have ham and pineapple now it reminds me of a Pizza place in Sicily
The guy there came to Australia on holiday and tried it at a place in Surfers Paradise.
He loved it
So he called it his Australian Pizza
When he found out I was Australian he made me one.
My condiments are
Capricciosa ,green capsicum, mushroom,ham, olives
Magherita, basil leaves
Sicilian,Hot salami
The House Special, Prawns, Bacon, Olive, Mushrooms,Dried flaked Chilli,Chopped Garlic and Parsley in olive oil

One will certainly contain pineapple for the ham and pineapple lovers (or conservative pizza lovers). I usually fill most of the trays especially when we have a larger group with a wider variety of ingredient.
I will try to remember to post some pics of tonight's setup just for those looking for ideas or inspiration.
It works exceptionally well, easy to use, easy to wash up and always keeps the assembly area totally organised and co-ordinated. I just need to make up sticky labels for those who don't recognise the ingredients, mainly the processed meats.

I use the same ones but made of lexan. I use 4 of the square, 1/2 depth ones and one square full depth one (for sauce). I have a large full depth one for cheese, and they fit in a metal pan. I use those long skinny freezer pops for ice in the pan. Works great and easy to clean, plus I can store leftovers for a couple of days I also use a bar condiment tray for small toppings.
