Decided to stop griping about the nettles and do something with them instead...
In case anyone else has nettles in their garden, here's the recipe:
Pastry made of
300 g flour
75 g butter
75 g coconut oil
splosh of water
Salt to taste
Rub the fat, salt and flour together, add enough water to make a stiff pastry, allow to rest for 1/2 hour.
Meanwhile pick and chop a handfull of fresh nettles (with gloves ), add some chopped cabbage, sweet corn, peas and onions, fry up in a pan with some delicious Spainish olive oil (or similar) and salt to taste, put a lid on and allow to simmer for a couple of minutes, then turn off and let cool.
Line a pie tin with the pastry, add the nettle mix and sprinkle with some grated cheese (Gruyere is best).
3 eggs
150 g cream
salt, pepper, nutmeg
Mix and pour over the pie, bake at 240 C for about 15 mins, or 200 C for about 30 mins.
Its very good eaten hot or cold.
