After we cooked our turkey, (see previous post) wife wanted to try out Peter Reinhart's white bread Variation 1. It was cooked at slightly higher temp than the recipe called for, and was done to 197 degrees in 20 min. Also, after we took it out of the baking pan we noticed that the bottom was still moist - no problem we just slid it back on the baking hearth for about 3 min and it re-carmelized the bottom just perfect.
The crumb is velvet soft and the crust is chewy, not glass crisp. It toasts wonderfully.
And the taste.....the taste - WOW!
