  • Favorite Sandwiches?

    Talking marmite made me think of sandwiches....

    A favorite in my wife's family (particularly the males) was peanut butter and sardines with thimbleberry jam on dense rye bread.

    I'm sure there are some other interesting combinations out here.

    This may be too tame, but Swiss people often eat cheese and jam sandwiches, specially when skiing or hiking.

    ...come to think of it, maybe its just me who does it, I'm not really sure.

    A nice thick slice of fresh brown bread, a couple of chunks of strong tasting cheese (Gruyere is good, or Appenzeller) and a generous helping of homemade blackberry jam on top. Mmmmh...

      A hot cast iron grill pan and cast iron press. Good sourdough sliced bread with munster cheese. Brush a little EVO on each side right before you sear it. A great panini.

          Or Tuna -- but only packed in Olive Oil.

          Who invented tuna in water? Very sad.

            Egg Salad with onions and lots of spices sounds really good right now. That or a BLT on toasted bread.

                Continental bread (local italian rustic loaf), spit roast lamb, grilled haloumi cheese and then squeeze lemon over the top......and some EVOO if its not moist enough

                  Damon, that's interesting with the lemon. Our favorite restaurant here serves their chuletas (lamb chops) with a lemon to squeeze over it.

                    A very simple one from my childhood, with a few tweaks: Two slices of hearth bread, spread each with Dijon mustard, layer on really old cheddar and best shaved ham, thickly butter the outside of one slice, place in frying pan (or sheet pan in the WFO if you're making lots) fry first side till brown, thickly butter remaining side, flip over, put a weight on it or press down with a spatula. Fry until second side is well browned and cheese is melted. Add some sauerkraut to the mix for a Reuben. Now that's healthy. You get an entire week's worth of fat in one go. Very efficient.

                        Bocadillos

                        I love a lot of different sandwiches, this is a short list of favorites some:

                        Smoked Chicken or Turkey with sweet onion, mayo and black pepper, sometimes with swiss cheese
                        Country Pate or liverwurst with mustard on dense rye
                        Fresh peanut butter on soft white bread, sometimes with crispy bacon
                        Shaved Roast beef, mayo and mustard
                        Tortilla Espanol on a baguette (Madrid airport ritual)
                        Tuna Salad (my kitchen sink version)
                        Serrano ham and fresh tomatoes
                        Basic grilled cheese or ham n cheese

                        And I never really liked lettuce on my sandwiches. I guess my mom used to make us sandwiches ahead of time for school. My wife found out from my cousin who helped once that she put lettuce on the sandwiches and then froze them ...no wonder!

                          ....So? I like building Sandwiches too.

                          Here's my favorite recipe:

                          Jim?s Tuna Fish Salad Sandwich

                          Take 2 cans of tuna and drain well

                          Add to mixing bowl:

                          Flaked tuna
                          ? to ? cup Diced onions
                          ? cup Diced celery
                          ? cup Pickle relish, or to taste
                          ? cup of fresh parsley, shredded
                          Dashes of Lemon juice and/or wine vinegar, to taste
                          3 or 4 tablespoons of Mayonnaise
                          3-6 Diced boiled egg whites
                          1 cup Shredded lettuce
                          Dash of Herbs de Provence
                          Black pepper to taste

                          Mix together gently with a fork and serve on fresh soft bread.

                          Jim?s Kitchen Sink Recipe Options :

                          Use a drizzle of olive oil
                          Use some fresh dill or cilantro instead of or with the parsley
                          Using the whole boiled eggs (I remove the yokes to reduce the fat/cholesterol in the recipe)
                          Diced dill pickle and/or diced English cucumber
                          Celery seeds to taste
                          Diced tomatoes (may need to drain well to keep mixture from being too watery
                          Sliced olives
                          Whole or chopped capers
                          Using salad dressing instead of the lemon juice/vinegar & olive oil
                          Try some grated parmesan
                          Serve it on a bed of lettuce instead of making a sandwich

                          Leftovers will last about a day in the refrigerator, but stir it up since the liquids will drain to the bottom.

                          And as usual, I never measure anything so adjust the recipe to suite your tastes!

                              I like it simple...2 thick slices of crusty Italian bread..genoa salami..provolone cheese and some homeade roasted peppers..and James..there's nothing wrong with tuna packed in water..i make sauce for pasta with white tuna packed in water and use my own oil.that way i know exactly what oil i'm consuming
