No...it isn't supposed to be dry wall. It is supposed to be cement board. Cement board is
okay. With metal studs it would be a good way to house an oven.
I agree though, the photo sure looks like sheetrock (and might be for his demo just because it is cheaper!)

Looks like HardiBacker board to me. Tends to have a lighter color than many of the other cement backer boards. As for the install, I mortar over the screws just like installing drywall - appears that this guy does the same.
In clicking on the link, among the items they offer for sale are HardiBacker screws, so I'm guessing it must be Hardi.
