    I got one of these Oklahoma Joe Highland from walmart and it has served me well so far. Not fancy and it has a few issues but it is pretty cheap and made of nice heavy metal.

    Fits 6 racks of ribs so I can cook for a bunch of people.

    The only mods I have done are gaskets on the doors and some RTV sealant around the firebox. Could also use a baffle plate to distribute the heat more evenly as the side closer to the firebox can be significantly hotter but that is really only an issue if you are using every inch of cooking space.

    Thank you. I added a chimney to the oven. I also think the top looks a little unfinished, but I'm going to live with it for a while.

    Thanks! We'll see how the smoker works in practice - I ripped off the design from an offset smoker I have, but precisely no engineering went into it...

    Note - the stonework was all done by local masons - around 2% of the manual labor was me, which was quite enough! I find I'm much happier sitting on the backhoe offering helpful instructions

    Here's a view showing the oven opening in relation to the rest. I don't have a chimney over the oven - or rather I do, but it's only 2 feet tall, and is flush with the "roof" of the oven. So far not an issue, but I have another 2 foot piece on hand if I need to extend it. The prevailing winds around here are from the SW, which is to say towards the camera, which should help.

    Heres a closer view of the cleanout door - it takes up half the wood storage in that bay, but should hold 10 years of ash before I have to clean it if my fireplace is any indication.

    The oven is buried in the mass above the bay, and accessed from the side

    No, I mortised the brick so it's flush - here's a pic. Floor is firebrick, no joints, laid over a 2" layer of heatstop II insulating cement, which is in turn on a 5" concrete slab.

    Do you catch your peels on the ash drop? It gave me a cool idea about mortising a brick so it would sit flush - maybe on my next build
