  • Curing my new Artigiano 100?

    I have seen posts talking about the curing process and simply bringing the fire up to the desired high temp and letting it cool down...However when reading the instructions they call for an " all day fire and into the night if possible" which obviously is tougher to schedule..Which is the right way? Also do the fires need to be on consecutive days or can we skip days?

    I wouldn't think skipping days would mean hurt anything, just the slow work-up to a big fire. Don't worry so much about 'into the night'. Do the best you can, and slowly work up in heat. There will still be some moisture being burned off through the first few pizza events... it'll get better with some age.
