Re: LOTS of Olive Oil in Dough on "PIZZA CUZ" episode
Did anyone get the recipe? I now have my DVR to record all of these episodes, but will have to wait until that episode air's.
Has anyone ever heard of this much olive oil in a dough recipe?
It was 2 1/2 pitchers into what seemed to be 40 or 50 pounds of flour....
Re: LOTS of Olive Oil in Dough on "PIZZA CUZ" episode
Hey, that episode was just on....then I remembered this thread....Any way..The Portland chef inquestion used what looked like 1/2 corn, meal or flour? and 1/2 wheat flour in a very large resturant mixer, then , the oil....they didn't say how much flour or what type of yeast. They were trying to "recreate" " Chicago" deep dish, I guess........They baked the crusts in cast iron for 3....min before removing from the oven then, topping and putting back in. It was the same episode that had the "no knead guy" from N.Y.
Re: LOTS of Olive Oil in Dough on "PIZZA CUZ" episode
aahhhh....... so they were using all this olive oil for a deep dish crust? I remember seeing the part where this guy put at least 2 pitchers (draft beer type of pitcher) into the large mixer.
Maybe all the oil makes the dough similar to a pie crust.......... ?
Has anyone else seen this episode?
