  • Streaming Video Bread Instructions

We have posted what we hope will be the start of a long and rich series of instructional video on pizza ovens, hearth bread, installation and cooking. The first three videos are part of the new Forno Bravo Bread section that we are putting together with Jim of Mary G Artisan Breads. Take a look and stay tuned for more video.

          Thanks James,
I always had trouble slashing my dough. Now I know to dip it in flour first.

Great videos! Seeing is so much easier than reading. Loved the New York accent with the Boule shaping with the Godfather theme in the background...

                Bimbo, all,

I'm ready to make more video clips, any time. How about a subject of interest to everyone? Dough handling, especially in the final stages, is a topic that is often overlooked. What is done--or not done--between the final rise and loading into the oven is crucial to repeatable success. Let me know.

Thanks for the videos. Love to make breads in my Horno which I completed this winter. The hint of dipping the blade in flour should help as I have some problems in this area. Chef Robert Here in the Land Of Enchantment

                          Mavano,

The cheap, simple docking blade holder can be gotten from the commercial arm of The San Francisco Baking Institute: Baking Supplies|Baking Baskets and Supplies|Basket|Wicker Baskets |Plastic Baskets|Linen Liners|Proofing Boards|Wood Peel. They've got lots of other hard to find stuff at reasonable prices, too.
