Hello
I am wanting to assemble a mobile trailer with the Casa2G100 to do hearth breads (at home) and pizzas (at events).

I was able to fish around to find some posts on building out a trailer, but I am having a hard time narrowing my search to fit my situation.

Can someone direct me to resources that speak to a larger oven, like the Casa2G100 and it being mounted on a trailer. Trailer specs, oven suggestions, any special considerations, etc.

Maybe this isn't exactly what you are looking for but maybe you can get some ideas from a company from the east coast. Check out What We Do to see if maybe a truck mounted unit might be something you could be interested in. I love their look and image! Just an idea.

Look at the build by 100million. Not sure if it meets your needs but he did a pretty good job of documentation. If you have the dollars, there is a company that will sell you a trailer for this purpose (and they are really nice).
