Planning to open a Gourmet Woodfired pizza restaurant in Spain

Hello, I have several successful businesses in the U.S. my family is relocating to Spain in the near future. I would like to open a restaurant/bar on the coast and would like some insight into the business. Any help, guidance and or recommendations of restaurants to visit in Spain, California or Washington state would be greatly appreciated! My first course of action will be to become an expert on wood Fired pizza so any recommendations in that regard would be helpful as well. Thanks! Aleta Gibson
