I'm in the process of building a pizza oven and have a few questions.
I had thought to have a herringbone floor but standard fire bricks at the places I've tried are not modular.
So the first question: is there a source for modular fire brick near NYC? Progressive does not have it.
Second question: is there a source for larger fire bricks, say 12 x 12 or 12 x 18 near NYC. I have found both of these on line but I'd like to save the shipping. Larger bricks on the oven floor means fewer seams.
In my town a pizza oven cannot be placed on a structure on a slab without first procuring a building permit. This annoyed me. So I built a metal frame, with adjustable legs, and had it powder coated. This way I need no building permit. I can adjust the legs (monster bolts, I'll post a photo) to keep the stove level. Also, this way I can winch/roll the oven (all 1,500 pounds of it) onto a trailer if I move or decide to go into the pizza on a trailer business.
