  • Hi from Ireland, aim to build a napolese oven.

    Hi guys,
I am from Ireland and I'm looking to build a napolese style pizza oven.

If any forum members could point me in the right direction for relevant plans, forum threads that would be fantastic.

    Thanks

Feel free to take a look. This could be used as a starting point for custom built ovens.

I hope this is helpful to you!

Many thanks for the prompt reply, I will take a good look at the PDF!

I want to build a napolese style oven as the very best pizzas I have tasted in the world were in Napoli.

          Welcome Hurricane!

One of your fellow countrymen, Aidan, built a beautiful oven, cutting all of his bricks with nothing more than a hand grinder. You can view his build here:

          http://www.fornobravo.com/forum/f8/3...eii-17334.html

I like to tell everyone embarking on this most-excellent oven-building journey,

          1) Plan your build to the highest level of your ability on paper (or computer) first. It is much easier than tearing it down later if you plan-as-you go and err

          2) Insulate, insulate, insulate your oven (over and under)

          3) Post lots of pics and ask as many questions as you like

My family (great-grandfather) is from Knockcroghery, but I have never been. One day I would love to visit.

Best of luck with your build.

          John

Re: Hi from Ireland, aim to build a napolese oven.

Thanks all for your replys, Ireland is a great country. I am from co. antrim, northern ireland.

I am a qualified bricklayer but did not practice this trade long due to the global recession, so I went down a different career path. So The basics don't concern me but building the dome scares me just a wee bit.

Can anyone clarify the requirements of a napolese oven, I know the peak of the dome is much lower in comparison to others but can anyone definitively say what dimensions/qualities make a napolese oven?

            thanks

              Hurricane

I do not know of a definite requirement for a napolese oven. The main idea is a lower and flatter dome that is engineered such that it is self supporting. That lower dome increases side force and at some point if too flat would not support itself. The FB plans cover this briefly. i will wager that their are many engineers amongst us that can calc the "sweet" spot of height and strength.

Also, if it were me doing it again, i would build the napolese style. If you look at the FB site specs for the Napoli oven they sale, the large commercial sizes both have a 16.5" dome height on a 48" and 56" oven. So, as a starting point 3:1 (width to dome height) is in range i think. So a 36" oven with a 12.5" dome height sounds about right. If it were a dome then it would be 18" in height.

I visited ireland back in may. A really beautiful country and i even saw the sun several days. Best wishes and welcome to the forum.

With Ireland having such a wet climate you will probably need to have your oven under cover, otherwise you'll be frequently firing it just to keep it dry.
