  • Oven deck repair questions

    Hello all.. I am new to this forum but have operated a wood fired pizza business in Southern Oregon for nearly 13 years. Our oven was built by a retired mason who had numerous oven constructions in his portfolio. All in all it has serviced us well but I'm currently experiencing a couple issues. The deck is just a fire brick and is developing some 'divots'. At this point I can't really start from scratch (although I have been envious of the Forno Bravo ovens since we opened). I can send pics later but is there a repair that can fill in the holes or is there a larger tile that I can set over the current deck? I do have some skills and access to a couple very talented tile layers. Any recommendations would be appreciated and I will send pics when the oven cools down on Sunday. It does get a pretty large volume of pizzas while we are open.
