Hi,
I recently came into possesion of a commercial pizza oven that was previously installed in a pizzeria. Well most of a pizza oven. I have the dome and a steel base, as well as the flue.
What I'm missing is the, floor(firebricks), stand and both the base and dome insulation. I live in Ireland and it rains a lot here.
The main questions I had are. Would it be best to forget about using the steel base given how wet Ireland is? And would a vermiculite, cement mix be better than insulation board given the climate? I've seen examples of mosaic tile for drainage on the forums here and i think this is a route I will go down.
Here is a link to the oven specs. https://www.pavesiforni.it/en/rpm-120-wood-gas-oven/
