Really starting to get a shape now...you'd be pleased...like the bluestone self.
Insulation layer....it seems from the photos you have enough room to the edge of the slab to fit a goodly amount of insulation. Yes you could use the perlite/portland mix about 4in thick (100mm) or you could go hi tec and use ceramic insulation about 2 in (50mm) and another 2 in of pealite. Cap the lot of with a sand portland lime render and seal to waterproof.
Chimney...make sure that you include a smoke chamber above the oven entrance before the chimney. It allows the smoke to gather before exiting up the chimney. Without it the smoke will not all be able to exit into the chimney fast enough and will exit strait into you face.
