Is it true that using the 00 flour in a gas fired home oven won't give me good crust like in the wood fired 1000 degree oven? I tried making dough using Caputo 00 and it took 7+ minutes to bake and it was not good. Should i try using Bread flour or AP flour for my 500 degree oven. I am looking to make Napoletana style Pizza.
