    Is cedar and acceptable wood to use?

    What if you are unable to identify the wood. Often tree services will leave logs at the side of the road and I am clueless as to what it is unless there are leaves still attached.

    Hi Joe

    I would not use the wood unless you know exactly what type of wood it is, as you don't want the cedar to give your oven a funny smell and taste to your food. I would stick with Oak, birch, ash any type of fruit trees such as Apple, cherry , pear, pecan. Just stay away from wet sappy wood such as Pine or Hickory which has a tendency to smoke. Hope this helps.
