I read about it in forum post, but all my searches come up short.

Thanks, for the info. Just printed it. My only problem is, I live in Mexico and cannot get "00" flour.

What 00 flour is a high protein flour which is finely ground. All you need to use really is is a high protein flour suitable for bread making.
