I just joined the forum because I'll soon be building neapolitan style oven. I've currently got a cob oven in the backyard which works great but I'm moving into a new house soon and it gives me the opportunity to build a better, more long term oven. Right now I mainly cook pizza in my oven and I usually have to dome each pizza to get the top done. I think a low dome oven would suit my needs better.
I've been scouring the internet for more info on how to build these ovens and I came across a video of professional builders making a commercial oven. For the dome it looks like they used a ring of steel around a form to build the entire dome as a separate piece from the oven walls. Anyone heard of someone using the same methods for a home built oven? I have metalworking experience and I could easily fabricate a ring like what is used in the video. Just trying to figure out how best to go about this.
