My business partner and I are in the early planning stages of establishing a community pizza night on the organic vegetable farm that he owns here in Central WIsconsin, USA.
We want to provide a very authentic pizza and most importantly, we are researching and want to learn more about both oven design and pizza making. Accordingly, my wife and I will be traveling to Northern Italy in March and would be most honored to identify and visit some authentic establishments to learn more about the Italian methods and culture.
Would you be able to point us in the right direction to authentic pizza places, preferably off the beaten path?
