  • Done vs rectangle

    Obviously there is a lot of talk about done ovens vs rectangular barrel ovens, and their ability ( or not) to cook pizza.

    People say say barrel oven are good for bread, but not pizza.

    What I'm interested in is why is the rectangular oven no good for pizza. Is it controlling the temperature of the oven?

    ive heard arguments about the shape - round is like a pizza - but I don't understand that logic as there must be a lot more factors that contribute I think???…

    FB does a reasonable job explaining the pros and cons of a pompeii vs a barrel vault in the pompeii plans. The plans are available electronically from FB for a nominal cost of $2 or $3. It is also a good baseline for anyone looking to build an oven. Although geared towards a dome there is a lot of info that works for a barrel as well. But be aware the plans are a little dated and there have been many innovations by forum members to make WFOs better.

      I'd recommend doing a forum search like the one I did a screen capture of below. From what I remember, both designs work with minor pros and cons as far as cooking. I have seen "brickies" say that the barrel design is not as structurally sound (something about expansion forces?) and possibly harder to build vs a round dome, but some reading will maybe help you decide. I do know you can't shove a round pizza into a square corner
