  • Forno Bravo Pompeii oven size

    I am going to build a Pompeii oven using the Forno Bravo plans, which offer two sizes: 36" and 42" ovens. The base on which I am building it is slightly too small for a 42" oven, but it can probably accommodate an oven a bit larger than 36"... perhaps 38" circumference. Is there any reason why I shouldn't build a slightly larger oven if I have the room? Is there something about the plans that necessitates I should stick with the 36" size? Thanks.

    You can build any side you want. You just need to scale the plan to whatever size you are looking for. I did a 40" and love it. But you could go all the way down to 30 or as big as you dare.

      Also, don't sweat over the odd number sizes. If a 37", 39", 41" or any fraction in between will work out on the space available, I would go for it . Just adjust the door height to keep it fairly close to the 63% ratio .
