I've been trying to find the specific dimensions for a 36" build when laying the oven floor. The plans are clear on the interior diameter (36") and the opening width (19") and height (12"). But what I can't understand is the depth of the arch run before getting to the actual opening of the oven. And another thing I'm confused about is the flue attached towards the back the arch or at the opening of the mouth of the oven? Any advice here would be appreciated.

Most people use a whole 9" brick or even an extra half brick. The bricks are laid whole in an arch until you get to the vent opening, then third or half to finish of the arch.
The vent is then attached above the vent hole and inner arch, so smoke comes out of your oven and straight up the vent/chimney.
Someone with experience will answer a lot better than me, I built mine very thin compared to most.

mdbronco , I'd suggest looking at some build threads to see what others have done for their vents. Have a look at mine as I tried to talk my way through that part of the build and have some sketches of what I did. I think I started asking questions about my vent around page 6 and several pages after that are gathering advice and building the vent. You can also see how I centered the flue front to back.My build thread
