Aloha... this sound like a noob question so I will put it here... I spoke with David at PTI thermal solutions in depth about fire bricks.. he told me over time all fire bricks break down and change and will release a toxic partical substance due to the silica.. he doesn’t believe that it’s safe to cook directly on any fire brick especially over a given time... he recommends only cooking on a “pizzastone”
I see that a lot of folks here use pizza stones or kiln shelves.. I also noticed that ovenzz offers a nfs rated brick that is the only fire brick actually rated for food contact
