Oven opening size

I plan on building a 36" oven. Opening width =19",opening height =12 (as recomended). Can this oven opening be rectangular instead of arched (as shown in the fornobravo website)?

Definitely. You can frame it with brick sides and angle iron to span the opening. Quite a few Pompeii Ovens have been built that way. That's how I did my two barrel vault ovens as well.
