can you use concrete adhesive to build your dome it works great for steps seem very strong.

I would advise against using and adhesive for building an oven. Although I don't know which product you are suggesting, I doubt it is engineered to tolerate the heat used in the oven.
Also, the standard system proposed in the Pompeii plan is really pretty easy to do (because it is a masonry project, everything is heavy.... ) and we know the standard system works. After investing the time to build an oven, it builds confidence to know that when you are complete, it will work....

A quick web search for "concrete adhesive" shows two types of products, a glue for concrete repairs, which mostly seem to be polyurethane or epoxy based, and a surface prep liquid for bonding new concrete to old. None of these things would benefit from 800 degree heat. Even if they were heat resistant, I don't think they would work on the variable thick/thin distance between bricks in most domes.
