I have a somewhat worn Despatch rotary oven. It's a bit worn and in need of work. I'm wondering about pulling out the shelves and rotary mechanism and building a brick baking surface that would just be one large baking area, about 3 pans deep and 3 wide. Does anyone know if this has ever been done? Any ideas about the chance of it working? We're a small, specialty bakery baking breads, muffins, scones, cakes, pies, etc. We've considered the possibility of doing pizza too.
