    Great pitas!
    I cooked them once before, last year - great fun - and I'm looking forward to doing some again, this time in my WFO. They're better and much fresher than any you can buy!

    Well the oven was super hot.
    Somewhere around 1000f.

    And I've been using 400 grams hard wheat flour, 100 grams of cake flour at 66% hydration. The extra water makes for lots of steam.

    Give that a try.

    The first time I made pita bread they ballooned up like that: it was very cool and entertained the guests. Every time since, they have just bubbled like naan. Any suggestions about getting the balloon effect?

    I didn't get a real good look at the missing bricks? How are you going to fix? Any idea what caused it? So far no falling bricks but I've only built 4 fires...
