Re: Baking Pitas with Redneck Dave.
Great pitas!
I cooked them once before, last year - great fun - and I'm looking forward to doing some again, this time in my WFO. They're better and much fresher than any you can buy!

Well the oven was super hot.Originally posted by dmun View PostThe first time I made pita bread they ballooned up like that: it was very cool and entertained the guests. Every time since, they have just bubbled like naan. Any suggestions about getting the balloon effect?
Somewhere around 1000f.
And I've been using 400 grams hard wheat flour, 100 grams of cake flour at 66% hydration. The extra water makes for lots of steam.
Give that a try.Last edited by asudavew; 06-12-2008, 06:05 AM.

I didn't get a real good look at the missing bricks? How are you going to fix? Any idea what caused it? So far no falling bricks but I've only built 4 fires...
Thanks

Take note of the missing bricks in my arch...
and of course the unfinished dome....
Being an ex-carpenter... I just always seem to start something else before I finish my "current" project.
