  • Gas or Wood Grill?

    Why not both?

    I designed my hearth to cook paella and meats over wood on a grill:

    But I sized it based on my gas grill and just took the stand off the grill so I could slide it into the wood hearth area as shown here...has worked fine.

    Great idea! Have you used the wood BBQ yet? The firebrick looks pretty clean there.

      I went 100% wood/charcoal. I use the Weber can starter for charcoal and it works great. Once the oven is being fired more often (we need clean), I'll also use wood coals.

        Sure George, it was my first paella in Spain!

        Gas is so simple you get lazy....but I will be doing chuletas over the wood, it's just better.
