  • I thought carbon burnt off at 300C?

    I refired my oven today to make some bread, scraped out the coals and made the bread.
    I then refired the oven later on to do chook wings.
    The oven ceiling was 450C with the new fire yet carbon formed, I thought carbon burnt off at 300C?
    The English language was invented by people who couldnt spell.

    If you had just cooked a load of bread then presumably your oven bricks had dropped in temp. When you refired and took another reading on the dome it would have been the surface temp. The bricks probably had not had sufficient time to respond to the flame. I think this is something you have to be aware of when using an infrared thermo. For baking and roasting I prefer the cheap bimetal thermometers you place directly inside the oven.
