  • New Zealand - what is the best wood to use in your oven?

    Hi all

    I am at a stage to start thinking of what wood to use in our oven. I would like to hear from other pizza oven users from New Zealand what wood they use and which gives best results. I am thinking of using macrocarpa or poplar. Also, am I correct in thinking our pine is not suitable as it has a high sap content and turpintines?

    I use manuka (with pine to help it get going). Works fantastic with lots of heat, and a nice smelling smoke.

    Burns for ages.

      Most volatiles in timber burn off at a way lower temp than you need for pizza.
