    Playing around last night after cooking pizza with a very hot oven. I threw on a piece of oak which had been oven dried literally bone dry and it created a lot of smoke and blackened the dome. When it was gone put on a piece of air dried oak and it cleared the dome and no smoke.
    Lesson don't over dry the wood.

    I recently changed our electric oven and used the oven door as a blast door for the wfo. Raised it it about 10mm off the floor for air flow. Works great and I can see the fire through the glass.

    I use an old cast iron grate from the fire as a log holder.. Great for the fire, air flow etc and very clean as it creates very little ash.

    Interesting, I'm on day 8 of my curing burns and I have been using kiln dried Oak. The oven refuses to burn clean although I'm pretty sure I am about at the point that this should be happening. Maybe I am experiencing the same thing you are...
